Feel like you might like Subnautica. I feel like it's what No Man's Sky would have been if No Man's Sky didn't end up sucking balls. I honestly think it's the best $25 I've spent on an indie game and probably one of the more impressive and polished (I've yet to find a serious bug and one thing I thought was a bug turned out to be a plot point) indie games out there.
Without spoilers, dung gets spooky when you start diving into some of the deeper waters, but the plot, world-building and mythology is, again, really impressive at the price point.

I've been playing this little ditty called "Factorio". It's become a total obsession. I'd imagine it's not for everybody, but it's easy to sink 100 hours into it without a second thought. The concept is simple.. a guy crashed on an alien planet, and has to build his way up to launching a rocket to get back into space.... by automation. Automating EVERYTHING. I love it because it's pure problem solving without a lot of the grinding that games like Terraria and Starbound have. There is so much depth and eternal optimization, that it's amazing. Progression is basically built into the game, as it's entirely open ended.. the map is literally infinite.
