Wolf Rain. Galaxy Express 999 / Adieu Galaxy Express 999. Samurai X. The Twelve Kingdoms. Of course Trigun, Gundum, and Full Metal are always good.
Probably some I'll think of.

Only anime I've ever watched is Record of Lodoss War, which was actually pretty good.

Don't really watch anime that much, but I caught Now and Then, Here and There a few years ago and it stuck with me. Really brutal, but really good too. Death Note was okay, hugely overrated.

Visually I like the collection of shorts in 5 Centimeters Per Second. Think it's available on youtube.

Sword Art Online, obviously. Also, Angel Beats and Clannad/ Clannad After Story.

A certain dreadlord recommended that to me ages ago. Thanks for reminding me. I'd love to watch it again.

Fairly new to the anime thing. But I've found a couple that I really enjoyed while being bored scrolling on netflix.

Tokyo ghoul as you mentioned was amazing. For something along those lines look for Attack on Titan. Also Deadman Wonderland. These are probably the two best I've seen besides Tokyo Ghoul. I had a lot of fun watching them. Very adult.

I really enjoy One Piece too. Sub par animation(ish) but they've avoided the habit that a few others I've seen make of just sitting there debating between characters for the entire episode.
