Strictly fantasy based anime:

Claymore*
Overlord*
Goblin Slayer*
Mushoku Tensei
Grimgar, Ashes and Illusions
Black Clover
So What if I’m a Spider () CR
Tower of God () CR
HunterxHunter
Radiant
Castlevania* () N
Witcher Anime* () N

* - Dark and Gore (Just a warning)
() CR - Crunchyroll exclusive (I think)
() N - Netflix exclusive

Gringar is the most like Is it Wrong to Pick up a Girl in a Dungeon. But it’s also ever going to be one season. Well worth it and in my opinion it’s a better story. They had a famous Japanese water colorist do the background for all the anime. It’s visually amazing.

Claymore is like female Witchers mixed with Berzerk if you’re familiar.

HunterxHunter is probably the greatest anime of all time, in my opinion.

So what if I’m a spider makes CR worth using. It’s very solid.

The rest are mostly good. Some better than others.

Gangsta is worth checking out but has the same issue as Gringar as far as there will only ever be one season.

And just a few more for fun since no one else is replying, but these are not fantasy based:

Tokyo Ghoul
Deadman Wonderland
Psycho Pass
Hellsing Ultimate
Bungo Stray Dogs
Gangsta
Jujutsu Kaisen
Fire Force (made by the same guy that did Soul Eater)
Ace of Diamond (I know firetruck all about baseball or sports but really got into it)
Food Wars (The Hogwarts equivalent of food I guess? Hyper sexualization though which isn’t really my deal but you know, anime.)

I personally prefer darker more intense stories. So keep that in mind. But it’s all subjective.

I actually got into anime because of Wotmud. Rico specifically. We would be on Skype calls and I would give him endless grief about anime. He almost always had it on in the background. Sounded like someone was swinging cats around by the tail. Here we are 17 years later. Now I prefer it to regular media. I enjoy the freedom that animation allows storytellers.

Crunchyroll
That Time I Got Reincarnated As a Slime
Cells at Work Season1/2
Re:Zero
Rascal Does Not Dream of Bunny Girl
Ranking of Kings

Netflix
Record of Ragnorak
Vampire in the Garden
Arcane

And while it's not an anime, I can't rave enough about Word of Honor

since you liked SAO and what appear to be fantasy/comedy shonen:
strongly recommend:
Log horizon
Kara no Kyoukai

others to consider:
Needless
Ao no exorcist
Magi
Tokyo Ravens
Tower of Druaga
Strike the Blood
one punch man (first season... 2nd season was outsourced to a korean company that cheaped out on the visuals)

Since you liked Stein's Gate:

Durarara (strong recommendation)
Baccano (same director/author, earlier work with a similar style of story telling)

If you can handle a slower burn than the current craze of isekai shonen fantasy crap:
Last Exile (first/original series only)
Made in Abyss
Kino no Tabi
Natsume Yuujincou

enjoyed log horizon a fair bit

took me a while but i am getting in to overlord its grown on me a lot

Stiens gate a bit more detailed review from me i watched the dub and the voice acting in english was an absolute treat to listen to so its well done you wont even realize its a dub

It was amazing i really like the way they built up the characters slowly and carefully lets you slowly get to know them it is like second to none i cared for them and what happened to them

when he had to make a hard choice at one point i stopped watching it for a month caus i did not want to see either result lol

i kinda fell in love with that show a bit i think it will stay in my head for a long while and not caus of the crazy stuff thats going on tho that was very entertaining

more for the characters and their relationships with each other
