If you know what you're getting into then go for it... If your GF has food service experience then defer to her judgement on the kitchen minutia. You're going to need a food handler's card anyway so you'll get a rundown on the basics. Don't mess around with those - you'll get shut down, you'll get someone sick, etc.
Be aware that you're going to need $50-100k to start up and it is going to be a lot of hard work and brutal competition.
